March is here, and with that plenty of luck is in the air! It is time to celebrate Saint Patrick’s Day and my kids are more than ready. As a matter of fact, we have been busy making our delicious Healthy Shamrock Healthy Shamrock Smoothie and our Pot of Gold Lemonade. Today we focus on a little yummy snack that is easy, quick and fun to do together. Ready for our Leprechaun Approved Chocolate Dipped Wafer Cookies?
The inspiration for these cookies are the adorable fortune cookies half dipped in pink chocolate for Valentine’s Day. You can make these Leprechaun Approved Chocolate Dipped Wafer Cookies ahead of time to surprise the kids and the Leprechauns, or get together 3 ingredients to do them together. They are very simple and a crowd pleaser. Here is how you make them:
- A pack of vanilla wafers
- Gold sprinkles
- A bag of green candy melts
- 1- Melt the candy chocolate
- 2- Dip the wafer tip into the melted candy
- 3- Have fun covering the green candy with the golden sprinkles
- 4- Place the covered wafers in the freezer for 5 minutes
- Tip 1: You can choose to replace the gold sprinkles for golden sugar
- Tip 2: You can use melted white chocolate and mix in green food coloring
Warning: you might need extra sprinkles if you are making these chocolate dipped wafer cookies with the kids. At least mine were very generous with them and we ran out 🙂
