We pride ourselves in our roots, heritage and the country we come from. Our Spanish is better than yours, and our national dance is so much more fun than yours! Latins do come from pretty much the same root, and the language is the most prominent characteristic that holds us together. In my opinion, corn is the one thing almost all of us eat, and believe our way of eating it is unique. Truth is that after thoroughly traveling for many years over and over the Spanish speaking countries in the Americas, we do eat corn differently. That being said, we all grill corn and we all condiment our corn.
It is believed corn originated in Mexico. Truth is Aztecs and Mayans valued highly corn and chocolate. Corn was a main staple then as it is today. I don’t know about you, but it is a food item that gives me a smile when I sink my teeth into it and also takes me back to fantastic childhood, travel and culinary memories.
I can’t say if this is a Mexican, Colombian, Venezuelan or Ecuadorian recipe. I can tell you that my best memories of eating corn this way take me back to my visits to Guatemala.
