What is the impact of adding avocados to your recipes? It is HUGE! In my Hispanic and Brazilian home, I grew up with avocado everything. Avocado in a smoothie? Yes please. Avocado in my soup? Absolutely. How about Avocado in a brownie or in ice cream? Of course! As a matter of fact, it was when I couldn’t get avocados year round that I realized how important it was to making my recipes amazing. Good thing that today, I can find avocados every week at my local supermarket. Buying avocados is an automatic reflex. Including them in my recipes is as natural as breathing to me. So much so that, avocados are a requirement in most of our meals. Case in point, our on-the-go, go-to, Yummy and Cool Avocado Beach Salad which becomes light, bright and fresh thanks to the avocados.
Cool Avocado Beach Salad Recipe
As soon as the thermometer hits 80 we are running outdoors. In particular to the beach. While we are in a hurry to get there, we never sacrifice eating something nutritious and delicious. That is why our beach food basket always includes our Avocado Beach Salad. Truth be told, we eat this salad on a regular basis (no beach outing required). The brilliant side of this salad is that you can swap out ingredients for anything you find in season or for your favorite ingredients. The avocado is the constant, and what gives the salad its fabulous punch. Here is our recipe:
INGREDIENTS:
Avocados From Mexico. (Half an avocado per salad/serving)
1 cup of black beans
1 cup of corn
1 cup of deveined, peeled shrimp
2 cups of cherry tomatoes
2 lemons
1 jar per salad
1 jar of citrus avocado dressing
PROCEDURE:
1. Cook the shrimp in lemon (let shrimp sit in a bowl of lemon juice for an hour)
2. Layer the ingredients in jar in your favorite order. I like from bottom to top: beans, corn, 1/2 Avocados From Mexico, shrimp, tomatoes.
3. Refrigerate until ready to eat.
Cool Mom Tip:
The best dressing for this salad is a creamy citrus avocado that is made by pureeing a cup of cilantro, one lemon, two Avocados From Mexico, and a dash of salt. Of course add heat to it with jalapeños when you are ready to puree the ingredients.
