Brio executive chefs offer a fantastic new eating experience to celebrate spring. This new menu will have us coming back to let out palates savor and delight.
Brio Spring Menu Where Fresh is Good
You know we have been going to Brio Tuscan Grill for a while. We love the food, the place, the ambiance, the interesting family style menu offerings and the superb service. For spring, the restaurant brings culinary joy to our taste buds with this menu:
Appetizers:
Whipped Ricotta & Roasted Tomato Bruschetta: what a fabulous way to start out an absolutely delicious meal _ lemon basil pesto, pine nuts, reggiano, Sea Salt.
Entrees
Chicken Sorrentino: this combination is pure genius -pesto marinated chicken, romano crusted eggplant, tomato compote whipped ricotta with a lemon vinaigrette
Fresh catch with seasonal vegetable salad: we had Mahi, but of course it will vary depending on what the fresh catch available will be. The fish will be grilled and lightly seasoned. Shaved Brussel sprouts asparagus farro grape tomatoes arugula toasted Marcona almonds are your salad topped with a lemon vinaigrette.
Marinated skirt steak: I was blown away when the executive chef shared that the steak was marinated in pineapple juices for 6 hours before it was cooked for us! Farro, haricot vert, grape tomatoes, chickpeas, feta, Marcona almonds and a toasted spice vinaigrette.
Pairing suggestions:
From Oregon, Brio brings out a Pinot Gris Acrobat. This is light bodied and dry drink with hints or citrus, mango, and vanilla. Perfect for the fresh catch and the chicken Sorrentino.
For your steak, lamb or lasagna, a red blend Canoe Ridge is suggested.
