The Colombian Sancocho Soup Recipe
You can make the Colombian Sancocho Soup Recipe with just about every protein meat. Fish, chicken, steak, and pork are all welcomed to the ingredient table. There are no limitations. In this case, we did ours with oxtail. This recipe is for four people and yes, All ingredients are available at my BJ’s Wholesale! Ingredients:
- 2 lbs of oxtail
- 1 chopped white onion
- 2 teaspoons of minced garlic
- 3 sprigs of cilantro and 2 chopped teaspoons of cilantro for garnish
- 2 halved ears of corn
- 1 lb of yuca – peeled and quartered
- 4 peeled and quartered green plantains
- 1 lb of your choice of potato
- 1 beef bouillon cube
- salt and pepper to taste
- 2 liters of water
- half a tomato- chopped
- 2 tablespoons of oil
Directions:
- Add the oil to your pot and put it over the stove on high until it is really hot
- Sear the oxtail
- Add the chopped onions, minced garlic and chopped tomato, salt, and pepper. Leave until onions are transparent.
- Next, add the water to the pot and allow it to reach the boiling point. Let it boil for 15 minutes.
- Now it is time for the vegetables. First, add the plantain. 15 minutes later add the potatoes and the bouillon cube.
- After 5-7 minutes add the yuca and corn. 2 minutes later reduce the temperature to medium and let it cook for another 35 minutes
- Reduce the temperature to low and leave it on the stove for another 10 minutes. Add the cilantro sprigs. The soup will thicken a bit here.
- Time to serve, garnish with the chopped cilantro and enjoy!

The Colombian Sancocho Soup Heritage
Besides being a full meal the Sancocho soup or stew flavor and aroma transport me back to Sundays at abuelita’s home. It used to be a home full of people talking, sharing, and enjoying each other’s company. It was also a place where kids were always laughing, running around, and playing non-stop in the backyard’s treehouse.
