Ok so I might date myself with this, but singing to the top of my lungs “poor unfortunate souls” with all of Ursula’s dramatic flair of Ursula is thoroughly part of my childhood. It was fantastic discovering Caribbean sounds with Sebastian in Under the Sea and Kiss the Girl. Now, we get to relive it all and finally “the collection is complete for a girl that has everything!”. “To go with my gadgets and gizmos aplenty”, I can now bring home The Little Mermaid as part of the Walt Disney Signature Collection. The Little Mermaid Inspires Mermaid Cookies
It was a huge treat to be “serenaded” by the great Alan Menken at D23Expo when he sat at the piano for us. It was truly a captivating gift. Just Like Disney’s The Little Mermaid is. As a mom, I love how it still inspires. When the kids watch it, I see how it gives so much positivism and curiosity for the world around them. It inspires me to lift Ariel’s hair straightener (a fork) to get in the kitchen and make some The Little Mermaid Tail Cookies!
The Little Mermaid Fun Fact:He told us then that Geman Cabarete had been the inspiration for Ursula’s musical I.D.
Disney Fun Fact: the first Disney movie that Disney legend Alan Menken worked on was The Little Mermaid.
How to Make The Little Mermaid Tail Cookies
This recipe makes about 25 cookies
Ingredients
For Cookies
- 1 cup of unsalted sweet cream butter softened
- 2 tsp vanilla extract
- 1.5 cups of powder sugar
- 1 Egg
- 3 cups of flour
- 1 teaspoon of baking soda
- A mermaid tail cookie cutter
- 1 teaspoon of cream of tartar
For Royal Icing
- 1.5 cups of powder sugar
- 1 teaspoon of cream of tartar
- 3 egg whites
- 1 teaspoon of vanilla
- 4 squeeze bottles
- mint leaf green and purple gel food coloring
- 4 disposable piping bag fitted with a number 2 tip
Little Mermaid Tail Cookie Directions
- Preheat oven to 350 degrees
- Combine butter, powder sugar, egg and vanilla until mix is fluffy
- In a separate bowl, mix flour, baking soda, and cream of tartar.
- Gradually add in the flour to the wet mixture.
- Once all the flour has been combined with the wet ingredients, sprinkle some flour onto a cutting board and knead with your hands till everything is combined thoroughly.
- Sprinkle flour onto the cutting board and roll out the dough to 1/4 inch thick.
- Use the cookie cutters and cut your mermaid tails.
- Bake in the oven for 7-9 minutes or until edges are slightly golden brown
- Place onto a wire rack to cool
Royal Icing directions
- Combine with a mixer all ingredients until thick and stiff with peaks- about 6-7 minutes
- Once your icing is made, split it into 4 bowls
- Add a few drops of each of the color to a bowl the leaf green will give a semi-dark share of green, mint green will be your light green. Add more purple gel to one bowl to get light and darker shades.
- Scoop some icing into the piping bags and set aside
- Add about 2-3 tbsp of cold water to the bowl and mix until combined. This will thin out the icing so that it will be easier to flat ice the cookies.
- Pour thinned icing into the squeeze bottle.
Cool mom tip: if your icing looks like yellow soup, add another cup of powder sugar.
Decorating directions:
- Use the light purple piping bag to outline the body of the tail.
- Outline the fins with the dark purple icing.
- Repeat steps with remaining colors
- Use the matching color squeeze bottles to fill in the outlines.
- With the dark purple, pipe three dots on the body using the light purple.
- Repeat steps with green colors
- Let dry completely for 4 hours
